Yangtze River Cruises
1 Executive Chef (to move from ship to ship) US$ 2000/month
2 Sous Chefs US$ 1500/month
1 Pastry Chef US$ 1400/month
The basic job description would be as follows:
1. Create, develop and improve on board western cuisine (including buffet breakfast, buffet lunch, 3-4 course banquet style dinner served individually, embarkation menu, afternoon tea, welcome cocktail reception, farewell banquet, desserts)
2. Review all existing menu items and suggest improvements
3. Review manifest for special meals requests and insure they are provided (vegetarian, low sodium, diabetic, etc.)
4. Assist in training kitchen and dining room service staff to improve food presentation
5. Work with the local head chef to order ingredients for recipes created
6. Provide periodic reports with feedback and suggestions on improving menus, service, adequacy of equipment and chinaware
English skills are required. Applicants should have at least basic English proficiency, and be able to communicate well in English when discussing food.
It helps if applicants have any pictures of the food they've created.
The local staff speaks Chinese, and some speak English. The River Guide who gives the narrative of sightseeing along the river speaks English well, and our cruise directors who are Americans or Europeans speak English. It is the cruise director who will discuss with the chefs any special meal requirements.
We will also need clothing sizes for those who are hired. They should not bring too much of their own clothing--it will be rather hot now on the Yangtze River with the summer months coming.

Prior to hiring, we would also need:
1. Copy of passport
2. Police report attesting to no criminal record
3. Health certificate
The final interviews will be held by the employer.
All our staff has a trial period of 90 days, which would be extended if their performance is satisfactory.
